  • 1 cup cooked rice (white or brown)
  • 2 cups milk
  • 1/2 cup sugar

  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked rice, milk, sugar, and salt. Mix well.
  3. In a separate bowl, beat the egg and then add in the vanilla and cinnamon, incorporating well.
  4. Slowly add the egg mixture to the rice mixture, stirring until it's evenly distributed.
Baking
  1. Pour the mixture into a greased baking dish. Sprinkle some raisins at this point if desired.
  2. Bake in the oven for about 30-40 minutes, or until the pudding is set and the top is golden brown.
  3. Remove from the oven and let it cool a bit before serving. Add optional toppings like whipped cream or nutmeg if you wish!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For serving, pair with fresh berries or a light fruit salad.
