  • 4 cups grated potatoes (preferably Yukon Gold) Yukon Gold potatoes work best for creaminess.
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 medium onion, diced Sauté until golden brown.
  • 1 cup chicken broth Use low-sodium if preferred.
  • 1 cup milk
  • ½ cup butter, melted Divided; use part for sautéing onions.
  • to taste Salt and pepper Adjust based on preference.
  • optional Thyme and rosemary For extra flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the grated potatoes with a pinch of salt and let them sit for about 15 minutes to release excess moisture.
  3. In a skillet, melt 2 tablespoons of butter and sauté the diced onions until they turn golden brown, about 5 minutes.
Mixing and Baking
  1. In the same bowl as the potatoes, add the shredded chicken, sautéed onions, chicken broth, milk, and the remaining melted butter. Stir until well combined. Season with salt, pepper, and other herbs, if using.
  2. Pour the mixture into a greased baking dish. Bake for 40-45 minutes, or until the top is bubbly and golden brown.
Serving
  1. Allow the pie to cool for a few minutes before serving. Enjoy the warm, comforting flavors!

Notes

For quicker prep, use a food processor to grate the potatoes. If making for a crowd, consider making two pies, one for now and one for later; it freezes beautifully.
