For the Zucchini Fries
  • 2 medium zucchinis Choose medium-sized zucchinis for best texture.
  • 1/2 cup grated Parmesan cheese Feel free to experiment with other grated cheeses.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs or panko for extra crunch if desired.
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs Whisked for the egg wash.
  • Cooking spray or olive oil For extra crispiness.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the zucchinis, then cut them into thin sticks (about 1/4 inch thick) for even cooking.
  3. In one bowl, whisk the eggs. In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
Coating and Baking
  1. Dip each zucchini stick first in the egg mixture, allowing excess to drip off, then roll it in the breadcrumb mixture until well-coated.
  2. Place the coated zucchini sticks on a baking sheet lined with parchment paper. Spray them lightly with cooking spray or drizzle with olive oil.
  3. Bake in the preheated oven for about 20-25 minutes, turning once halfway through, until golden brown and crispy.
  4. Remove from the oven and let cool for a minute before serving.
  5. Enjoy them while they’re hot!

Notes

Store leftovers in an airtight container for up to 3 days. For longer preservation, freeze uncooked coated zucchini fries for up to 2 months. To reheat, bake at 400°F (200°C) for 10-15 minutes or use an air fryer.
