Preparation
- Preheat your oven to 425°F (220°C).
- Wash and dry the zucchinis, then cut them into thin sticks (about 1/4 inch thick) for even cooking.
- In one bowl, whisk the eggs. In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
Coating and Baking
- Dip each zucchini stick first in the egg mixture, allowing excess to drip off, then roll it in the breadcrumb mixture until well-coated.
- Place the coated zucchini sticks on a baking sheet lined with parchment paper. Spray them lightly with cooking spray or drizzle with olive oil.
- Bake in the preheated oven for about 20-25 minutes, turning once halfway through, until golden brown and crispy.
- Remove from the oven and let cool for a minute before serving.
- Enjoy them while they’re hot!
Notes
Store leftovers in an airtight container for up to 3 days. For longer preservation, freeze uncooked coated zucchini fries for up to 2 months. To reheat, bake at 400°F (200°C) for 10-15 minutes or use an air fryer.
