- In a mixing bowl, combine the shredded chicken, cheese, cumin, and chili powder. Mix until the chicken is evenly coated.
- Warm the tortillas in a skillet or microwave until they are pliable to prevent cracking when rolling.
Filling and Cooking
- Place a few tablespoons of the chicken mixture in the center of each tortilla and roll it tightly, tucking in the edges.
- For baking: Preheat your oven to 425°F (220°C). Place the rolled taquitos on a baking sheet lined with parchment paper. Spray lightly with cooking oil and bake for 15-20 minutes until crispy.
- For frying: Heat oil in a deep skillet. Fry the taquitos in hot oil, a few at a time, turning until all sides are golden brown (about 3-4 minutes). Remove and drain on paper towels.
Serving
- Serve hot with your favorite toppings such as salsa, sour cream, and guacamole.
