Ingredients
  

For the Filling
  • 2 cups cooked and shredded chicken Use leftover rotisserie chicken for added flavor.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
For the Taquitos
  • 10-12 pieces small corn or flour tortillas Warm the tortillas to prevent cracking.
  • Oil For frying (if frying).
For Serving
  • Salsa For serving.
  • Sour cream For serving.
  • Guacamole For serving.
  • Shredded lettuce For serving.

Method
 

Preparation
  1. In a mixing bowl, combine the shredded chicken, cheese, cumin, and chili powder. Mix until the chicken is evenly coated.
  2. Warm the tortillas in a skillet or microwave until they are pliable to prevent cracking when rolling.
Filling and Cooking
  1. Place a few tablespoons of the chicken mixture in the center of each tortilla and roll it tightly, tucking in the edges.
  2. For baking: Preheat your oven to 425°F (220°C). Place the rolled taquitos on a baking sheet lined with parchment paper. Spray lightly with cooking oil and bake for 15-20 minutes until crispy.
  3. For frying: Heat oil in a deep skillet. Fry the taquitos in hot oil, a few at a time, turning until all sides are golden brown (about 3-4 minutes). Remove and drain on paper towels.
Serving
  1. Serve hot with your favorite toppings such as salsa, sour cream, and guacamole.

Notes

For best results, warm corn tortillas to prevent breaking. You can customize fillings according to your preference.
