Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, yogurt (or applesauce), honey (or maple syrup), and eggs.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in mixed fruits.
  6. Lightly grease a muffin tin or use silicone cups.
  7. Spoon the batter into each cup, filling them about 3/4 full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes, until golden brown.
  2. Let cool for a few minutes before removing from the pan.

Notes

These cups can be customized with different fruits or flavors. Store in an airtight container in the fridge for up to a week, or freeze for longer storage. Reheat in the microwave or oven.
