Ingredients
  

Fish and Marinade
  • 2 fillets Mahi Mahi fillets (about 6 ounces each) Fresh fillets recommended for best taste.
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed) For the best flavor, use freshly squeezed.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the Mahi Mahi fillets under cold water and pat them dry with paper towels.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, onion powder, paprika, salt, and pepper.
  4. Place the fillets in a baking dish. Pour the marinade over the fish, ensuring each piece is well-coated.
Cooking
  1. Bake the dish in the oven for about 15-20 minutes, or until the fish has turned opaque and flakes easily with a fork.
  2. Once done, remove from the oven and garnish with freshly chopped parsley or basil if desired.

Notes

Don’t overcook the fish to prevent it from drying out. Store leftovers in an airtight container in the refrigerator for up to 2 days.
