  • 1 block feta cheese Opt for Greek feta for best flavor.
  • 1 pound large shrimp, peeled and deveined Alternatively, swap shrimp for grilled chicken or vegetables.
  • 2 cups cherry tomatoes
  • 3 cups pasta (your choice) Cook according to package instructions.
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 teaspoons dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley Add just before serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the block of feta cheese at the center. Surround it with cherry tomatoes and shrimp, then drizzle with olive oil and add minced garlic, oregano, salt, and pepper. Toss everything gently to coat.
Baking
  1. Place the baking dish in the preheated oven and let it bake for about 20 minutes, or until the shrimp are pink and the feta is soft and melting.
Cooking Pasta
  1. While the feta and shrimp are baking, cook your pasta according to the package instructions until al dente. Drain and set aside.
Combining
  1. Once baked, remove the dish from the oven. Stir the melted feta and tomatoes to create a creamy sauce. Add the cooked pasta and toss until well combined.
  2. Top with fresh parsley for a burst of color and serve warm!

Notes

To store leftovers, place the Baked Feta Pasta in an airtight container and refrigerate for up to 3 days. Reheat in the microwave or on the stovetop over low heat, adding water or olive oil for texture.
