  • 200 g orzo pasta
  • 200 g feta cheese
  • 2 cups cherry tomatoes Juicy and fresh
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste Adjust seasoning based on preference
  • Fresh basil for garnish Adds flavor and aroma

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a suitable baking dish, place the feta cheese in the center and surround it with the cherry tomatoes. Sprinkle minced garlic over the top.
  3. Drizzle the olive oil over the feta and tomatoes. Season with salt and pepper to taste.
Baking
  1. Place the baking dish into the preheated oven and bake for about 20 minutes until the feta is golden brown and the tomatoes are bursting with juices.
Cooking Orzo
  1. While the feta and tomatoes are baking, bring a pot of salted water to boil and cook the orzo pasta as per package instructions until al dente. Drain the pasta.
Combining
  1. Once the feta and tomatoes have baked, remove the dish from the oven. Mix the warm orzo into the feta and tomato mixture.
  2. Stir until the pasta is well coated with the creamy goodness.
Serving
  1. Top with fresh basil for an aromatic flair before serving.

Notes

Leftover Baked Feta Orzo can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, heat in short bursts in the microwave. This dish can also be enjoyed cold as a pasta salad.
