Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup crushed pretzels Regular or gluten-free
  • 1/2 cup honey
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Method
 

Preparation
  1. In a bowl, mix honey, balsamic vinegar, olive oil, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken breasts, making sure they are well coated. Let them marinate for at least 10 minutes, or up to an hour for a deeper flavor.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. In a separate bowl, place the crushed pretzels.
  3. Take each marinated chicken breast and dredge it in the crushed pretzels until fully coated.
  4. Place the coated chicken breasts on a parchment-lined baking sheet.
  5. Bake for about 20-25 minutes, or until the chicken is cooked through and the pretzel crust is golden brown.
  6. Once out of the oven, let the chicken rest for a few minutes. Garnish with fresh parsley, slice, and serve with your choice of sides.

Notes

Substitutions: You can use thighs instead of breasts or tofu for a vegetarian option. Be sure not to overbake the chicken to maintain moisture. Store leftovers in an airtight container for 3-4 days or freeze for longer storage. Reheat in the oven to maintain crunch.
