- In a bowl, mix honey, balsamic vinegar, olive oil, garlic powder, onion powder, salt, and pepper.
- Add the chicken breasts, making sure they are well coated. Let them marinate for at least 10 minutes, or up to an hour for a deeper flavor.
Cooking
- Preheat your oven to 400°F (200°C).
- In a separate bowl, place the crushed pretzels.
- Take each marinated chicken breast and dredge it in the crushed pretzels until fully coated.
- Place the coated chicken breasts on a parchment-lined baking sheet.
- Bake for about 20-25 minutes, or until the chicken is cooked through and the pretzel crust is golden brown.
- Once out of the oven, let the chicken rest for a few minutes. Garnish with fresh parsley, slice, and serve with your choice of sides.
Notes
Substitutions: You can use thighs instead of breasts or tofu for a vegetarian option. Be sure not to overbake the chicken to maintain moisture. Store leftovers in an airtight container for 3-4 days or freeze for longer storage. Reheat in the oven to maintain crunch.
