Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a cutting board and pound them gently to an even thickness.
  3. In a bowl, combine the Dijon mustard and maple syrup, and mix until well integrated.
  4. Season the chicken breasts with salt and pepper on both sides.
Coating and Baking
  1. Dip each chicken breast into the mustard-maple mixture, then dredge in breadcrumbs mixed with garlic powder and paprika.
  2. Place the coated chicken onto a greased baking sheet and lightly spray the tops with olive oil spray.
  3. Bake for 25-30 minutes or until the chicken is cooked through and the breadcrumbs are golden.
