  • 1 package 8 oz cream cheese, softened
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 2 pieces green onions, chopped
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • to taste Salt and pepper
Tortillas
  • 8 small tortillas (corn or flour)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, mix the softened cream cheese with the shredded chicken, shredded cheese, green onions, cumin, garlic powder, onion powder, salt, and pepper. Stir until combined and smooth.
  3. Take a tortilla and spoon about 2 tablespoons of the filling onto it. Roll it tightly, starting from the edge, and place seam-side down on a baking sheet lined with parchment paper. Repeat with the remaining tortillas and filling.
  4. Lightly brush the taquitos with olive oil to help them achieve a gorgeous golden color in the oven.
Baking
  1. Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the taquitos are crispy and golden brown.
  2. Allow to cool for a few minutes, then serve warm with your favorite dipping sauces like salsa or guacamole.

Notes

For a gluten-free option, substitute with gluten-free tortillas. For extra flavor, consider adding diced jalapeños to the filling. Avoid overfilling to prevent bursting while baking. Leftovers can be refrigerated for up to 3 days or frozen, either before or after baking.
