Filling
  • 2 cups cooked chicken, shredded Rotisserie chicken works great!
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese Cheddar or a Mexican blend
  • 1 tsp taco seasoning
Wrap
  • 8-10 pieces small tortillas Corn or flour, your choice
  • as needed Cooking spray or oil for baking

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, mix the shredded chicken, softened cream cheese, shredded cheese, and taco seasoning until well combined.
  3. If using corn tortillas, warm them slightly to make them more pliable.
  4. Spoon 2-3 tablespoons of the chicken mixture onto the lower third of a tortilla and roll it tightly, tucking in the sides.
  5. Arrange the rolled taquitos seam-side down on a baking sheet lined with parchment paper or sprayed with cooking oil.
  6. Lightly spray the tops of the taquitos with cooking spray or brush them with oil.
  7. Bake for about 20-25 minutes until golden brown.
  8. Let them cool for a minute before serving with toppings like salsa, guacamole, or cilantro.

Notes

You can substitute rotisserie chicken or use beans/vegetables for a vegetarian option. Refrigerate unbaked taquitos if made in advance, and bake directly from the fridge, increasing baking time slightly.
