Preparation
- Preheat your oven to 400°F (200°C).
- In a medium-sized bowl, mix the shredded chicken, softened cream cheese, shredded cheese, and taco seasoning until well combined.
- If using corn tortillas, warm them slightly to make them more pliable.
- Spoon 2-3 tablespoons of the chicken mixture onto the lower third of a tortilla and roll it tightly, tucking in the sides.
- Arrange the rolled taquitos seam-side down on a baking sheet lined with parchment paper or sprayed with cooking oil.
- Lightly spray the tops of the taquitos with cooking spray or brush them with oil.
- Bake for about 20-25 minutes until golden brown.
- Let them cool for a minute before serving with toppings like salsa, guacamole, or cilantro.
Notes
You can substitute rotisserie chicken or use beans/vegetables for a vegetarian option. Refrigerate unbaked taquitos if made in advance, and bake directly from the fridge, increasing baking time slightly.
