Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine your mixed vegetables with minced garlic, olive oil, salt, and pepper. Toss well to coat.
- Spread the seasoned vegetables evenly in a baking dish. Place the cod fillets on top and pour the crème fraîche or heavy cream over the fish.
- Sprinkle additional salt and pepper over the fillets.
Cooking
- Cover the baking dish with foil and place it in the oven.
- Bake for 20-25 minutes or until the fish is opaque and flakes easily with a fork.
Serving
- Remove from the oven, garnish with fresh herbs, and serve immediately.
Notes
For a brighter flavor, add a squeeze of lemon to the cream. Avoid overcrowding the baking dish for even cooking. Leftovers can be refrigerated for up to 3 days or frozen for future enjoyment.
