  • 4 pieces Cod Fillets (about 6 ounces each)
  • 1 cup Crème fraîche or heavy cream
  • 2 cups Mixed vegetables (such as chopped carrots, zucchini, and bell peppers)
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • Salt and Pepper to taste
  • Fresh herbs (such as parsley or thyme), for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine your mixed vegetables with minced garlic, olive oil, salt, and pepper. Toss well to coat.
  3. Spread the seasoned vegetables evenly in a baking dish. Place the cod fillets on top and pour the crème fraîche or heavy cream over the fish.
  4. Sprinkle additional salt and pepper over the fillets.
Cooking
  1. Cover the baking dish with foil and place it in the oven.
  2. Bake for 20-25 minutes or until the fish is opaque and flakes easily with a fork.
Serving
  1. Remove from the oven, garnish with fresh herbs, and serve immediately.

Notes

For a brighter flavor, add a squeeze of lemon to the cream. Avoid overcrowding the baking dish for even cooking. Leftovers can be refrigerated for up to 3 days or frozen for future enjoyment.
