  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Let them sit for a few minutes.
  3. In a shallow dish, mix breadcrumbs and grated Parmesan cheese.
  4. Spray each piece of chicken with olive oil spray and dip them into the breadcrumb mixture, ensuring they are well coated.
Baking
  1. Place the coated chicken breasts onto a baking sheet lined with parchment paper.
  2. Bake for about 20 minutes, or until golden brown and cooked through.
  3. Remove from the oven and spoon marinara sauce over each piece. Sprinkle with shredded mozzarella cheese.
  4. Return to the oven for another 10 minutes or until the cheese is bubbly and slightly golden.
Serving
  1. Allow to cool slightly before serving. Enjoy with a side salad or over pasta.

Notes

For added texture, substitute breadcrumbs with crushed whole-grain crackers. Ensure you don't overcook the chicken to keep it juicy. Store in an airtight container and refrigerate for up to 3 days or freeze for up to 2 months.
