  • 2 tablespoons olive oil Substitutions: can use melted butter or preferred cooking oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken leg quarters under cold water and pat them dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper. Rub mixture generously over the chicken leg quarters.
  4. Place the seasoned chicken leg quarters skin-side up in a baking dish, spaced out for even cooking.
Cooking
  1. Bake in the oven for 45 minutes to an hour, or until the internal temperature reaches 165°F (75°C).
  2. For added crispiness, turn on the broiler for the last 5 minutes.
  3. Let them rest for 5 minutes before serving to allow juices to redistribute.

Notes

Got leftovers? Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. To reheat, preheat oven to 375°F (190°C) and heat for about 20 minutes, removing foil for the last 5 minutes for crispiness.
