  • 2 medium zucchinis Choose medium-sized for best texture.
  • 1 cup mozzarella cheese, shredded Feel free to swap for other cheeses.
  • 1/2 cup cheddar cheese, shredded Alternate with your favorite cheese.
  • 2 tablespoons olive oil For seasoning the zucchini.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
  • 1 teaspoon garlic powder
  • 1/2 cup breadcrumbs Optional for a crunchy topping.
  • 1/4 cup Parmesan cheese Optional, for added flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the zucchinis, cut off both ends, and slice them into rounds about 1/4 inch thick.
  3. In a large bowl, toss the zucchini rounds with olive oil, salt, pepper, and garlic powder until evenly coated.
Assembly
  1. On the prepared baking sheet, layer zucchini rounds and sprinkle mozzarella, cheddar, and Parmesan cheese between layers. Add breadcrumbs if using.
Cooking
  1. Bake for about 25-30 minutes or until the cheese is bubbly and golden and the zucchini is tender.
  2. Let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
