  • 2 slices slices of bread (whole wheat, sourdough, or multigrain) Use your preferred bread
  • 1 ripe avocado ripe avocado Should be ripe for easy mashing
  • 2 slices fresh mozzarella cheese Slice or use shredded if unavailable
  • 1 medium tomato, sliced Freshly sliced for best flavor
  • to taste Butter or olive oil for grilling Choose based on preference
  • to taste Salt and pepper For seasoning the avocado

Preparation
  1. Gather all your ingredients. Slice the tomato and mozzarella cheese. Cut the avocado, remove the pit, and scoop it into a bowl. Mash the avocado lightly with a fork and season with a pinch of salt and pepper.
Assemble the Sandwich
  1. Spread a layer of mashed avocado on one slice of bread, followed by a slice of mozzarella cheese, a few slices of tomato, and then another slice of mozzarella Cheese. Spread more mashed avocado on the final slice of bread before closing your sandwich.
Grill the Sandwich
  1. In a skillet over medium heat, add a little butter or olive oil. Place the sandwich in the skillet and cook for 3-4 minutes until golden brown. Flip it over and grill for another 3-4 minutes until the other side is golden and the cheese has melted.
Serve
  1. Remove from skillet, slice in half for easy sharing, and enjoy while hot.

Notes

For the best results, use thicker bread like sourdough. Options for cheese include shredded mozzarella or cheese blends. Consider adding red pepper flakes or jalapeƱo for extra spice. Store leftovers in an airtight container for up to 2 days.
