Avocado and Corn Breakfast Plate

Are you ready for a breakfast that’s not just delicious but also incredibly easy to whip up? Introducing the Avocado and Corn Breakfast Plate! Picture this: creamy avocado, sweet corn, and a perfectly fried egg, all laid out on a slice of toasted multigrain bread.

Ingredients
  

  • 1 Fried egg
  • ½ Avocado slices
  • 1 slice Toasted multigrain bread
  • A handful of Cherry tomatoes
  • ½ cup Corn fresh or canned
  • A handful of Blueberries

Instructions
 

  • Fry the Egg: Heat a non-stick skillet over medium heat. Crack the egg into the skillet and cook to your preferred level (sunny side up, over-easy, etc.). Cooking for about 2-3 minutes for sunny-side is usually perfect!
  • Prepare the Corn: If you're using fresh corn, cook it in boiling water for about 3-5 minutes until tender. If canned, simply drain and rinse it.
  • Toast the Bread: While your egg is frying, place a slice of multigrain bread in the toaster and toast until golden brown.
  • Arrange the Plate: Once everything is ready, place the toasted bread on a plate. Top it with the sliced avocado, cooked corn, and fried egg.
  • Add Cheese and Season: Optionally, you can sprinkle some cheese on top and season with salt and pepper to taste.
  • Garnish with Tomatoes and Blueberries: Scatter some cherry tomatoes and blueberries around the plate for an added pop of color and flavor.
