  • 1 head romaine lettuce, chopped Wash thoroughly and dry to enhance crispness.
  • ½ cup Parmesan cheese, grated Add more if desired on top.

  • ¼ cup Caesar dressing Choose Halal-friendly options if needed.
  • 1 cup croutons Use store-bought or homemade for extra crunch.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise and scoop out the seeds. Slice the squash into thin half-moons.
  3. Place the sliced squash on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  4. Roast for 20 minutes, flipping halfway through until tender and golden.
  5. Chop the romaine lettuce into bite-sized pieces and place it in a large mixing bowl.
Assembly
  1. Add the roasted delicata squash, croutons, and Parmesan cheese to the bowl.
  2. Drizzle with Caesar dressing and toss everything together gently until evenly coated.
Serving
  1. Serve immediately and sprinkle a bit more Parmesan on top if desired!

Notes

If you have leftovers, keep the dressing separate to maintain the crispness of the lettuce. Aim to consume the salad within 2 days for the best quality. Squash can be substituted with butternut squash or sweet potatoes.
