Ingredients
  

For the Shrimp
  • 1 pound large shrimp, peeled and deveined Use high-quality shrimp for better flavor.
For the Cocktail Sauce
  • 2 cups tomato juice Chilled for best flavor.
  • 1 medium red onion, finely chopped
  • 1 ripe avocado, diced Gently fold in to avoid mashing.
  • 1 cup cilantro, chopped
  • 1 cup diced cucumber
  • 1-2 jalapeƱos, finely chopped Optional for spice; adjust according to preference.
  • 2 juices of limes
  • to taste Salt and pepper
  • Tortilla chips, for serving Pair for a delightful crunch.

Method
 

Preparation
  1. In a large pot, bring water to a boil and add a pinch of salt.
  2. Add the shrimp and boil for about 2-3 minutes or until they turn pink and opaque.
  3. Drain and cool the shrimp in an ice bath.
Mixing the Sauce
  1. In a large mixing bowl, combine the tomato juice, lime juice, and season with salt and pepper.
  2. Add the chopped red onion, cilantro, cucumber, and jalapeƱos (if using) to the mixture.
  3. Stir until everything is well combined.
Combining Ingredients
  1. Once the shrimp have cooled, chop them into bite-sized pieces.
  2. Gently fold the shrimp into the mixture.
  3. To finish, gently fold in the diced avocado.
Serving
  1. Chill in the refrigerator for about 15 minutes before serving.
  2. Serve with crispy tortilla chips.

Notes

For best flavor, let the cocktail chill for a few hours before serving. Store leftovers in an airtight container for up to 2 days.
