  • 1 cup long-grain white rice Rinsed before cooking
  • 2 cups chicken or vegetable broth Use homemade or high-quality broth for best flavor
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas Optional
  • 2 tablespoons vegetable oil For sautéing
  • to taste Salt
  • to garnish Fresh cilantro
  • for serving Lime wedges

Method
 

Preparation
  1. Start by rinsing the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the rinsed rice and toast for about 3-4 minutes until it turns slightly golden.
  5. Stir in the diced tomato and tomato sauce, cooking for 2 additional minutes.
  6. Pour in the chicken or vegetable broth and add salt to taste. Stir well, then bring to a boil.
  7. Lower the heat, cover the saucepan, and let simmer for approximately 15-20 minutes or until rice is tender and absorbs all the liquid.
  8. Fluff the rice with a fork, stir in peas if using, and garnish with fresh cilantro before serving with lime wedges.

Notes

Use long-grain rice for best texture. Using homemade broth enhances flavor significantly. Allow leftovers to cool completely before storing in an airtight container for 3-4 days, or freeze for up to 2 months.
