- Start by rinsing the rice under cold water until the water runs clear.
- In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rinsed rice and toast for about 3-4 minutes until it turns slightly golden.
- Stir in the diced tomato and tomato sauce, cooking for 2 additional minutes.
- Pour in the chicken or vegetable broth and add salt to taste. Stir well, then bring to a boil.
- Lower the heat, cover the saucepan, and let simmer for approximately 15-20 minutes or until rice is tender and absorbs all the liquid.
- Fluff the rice with a fork, stir in peas if using, and garnish with fresh cilantro before serving with lime wedges.
Notes
Use long-grain rice for best texture. Using homemade broth enhances flavor significantly. Allow leftovers to cool completely before storing in an airtight container for 3-4 days, or freeze for up to 2 months.
