Ingredients
  

For the Dough
  • 2 cups mashed potatoes
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend for a gluten-free option.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
For Frying
  • Butter to taste butter for frying Use a generous knob of butter.

Method
 

Preparation
  1. In a mixing bowl, combine 2 cups of mashed potatoes with 1 cup of all-purpose flour, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt. Gently mix until everything is incorporated into a soft dough.
  2. Lightly flour a clean surface and turn the dough out onto it. Using your hands, flatten the dough into a circular shape, about 1/2 inch thick. Use a knife to cut it into quarters, forming triangles.
Cooking
  1. Heat a skillet over medium heat and add a generous knob of butter. Once melted, place the potato triangles into the skillet.
  2. Fry for about 6-8 minutes on each side until they are golden brown and crispy.
Serving
  1. Remove them from the skillet and place them on a plate lined with paper towels to absorb any excess butter. Serve warm with your choice of toppings or simply with a spread of butter.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze them for up to three months. Reheat in a skillet over low heat for best results.
