  • 2 large large potatoes (about 1 pound) Russet potatoes work best for this recipe
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • to taste Salt
  • Butter (for frying)

Method
 

Preparation
  1. Peel and cut the potatoes into halves or quarters. Place them in a pot of salted water and bring to a boil. Cook until fork-tender (about 15 minutes), then drain and let cool slightly.
  2. Once cooled, mash the potatoes in a large bowl until smooth and free of lumps.
  3. To the mashed potatoes, add the flour, baking powder, and salt. Mix until a soft dough forms.
  4. Transfer the dough to a floured surface and divide it into two balls. Flatten each ball into a disc about ½ inch thick.
  5. Using a knife, carefully cut each disc into quarters, creating a classic farl shape.
Cooking
  1. In a skillet, melt some butter over medium heat. Place the farls in the pan and cook for about 5 minutes on each side, or until golden brown and crispy.
  2. Serve warm with butter or your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over medium heat, or freeze for up to a month.
