  • 6 cups peeled and sliced tart apples (like Granny Smith) Use tart apples for best flavor.
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened Should be at room temperature.
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup raisins (optional) Can be omitted based on preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan or a similarly sized dish.
  3. In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  4. In another large mixing bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  7. Gently fold in the sliced apples and raisins (if using).
  8. Transfer the mixture into the prepared baking dish, spreading it evenly.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool for a few minutes before removing it from the pan.
  3. Dust with powdered sugar before serving.

Notes

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for about a week. Freeze for up to 3 months.
