  • 2 medium cucumbers, thinly sliced English or Persian cucumbers work best.
  • 1 tablespoon salt
  • 1 tablespoon sugar Adjust for sweetness preference.
  • 2 tablespoons rice vinegar More can be added for extra zing.
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds, toasted
  • 2 green onions sliced
  • a pinch red pepper flakes, optional For a spicy kick.

Preparation
  1. Wash the cucumbers thoroughly and slice them thinly.
  2. In a large bowl, toss the sliced cucumbers with salt and let them sit for about 10 minutes.
  3. In a separate bowl, whisk together sugar, rice vinegar, sesame oil, soy sauce, and red pepper flakes if using.
  4. Once cucumbers have released moisture, drain and rinse to remove excess salt.
  5. Combine the cucumbers with the dressing, sesame seeds, and green onions.
  6. Mix gently until cucumbers are evenly coated and let sit for a few minutes before serving.
  7. Serve chilled.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. For best texture, mix cucumbers and dressing just before serving.
