- Wash the cucumbers thoroughly and slice them thinly.
- In a large bowl, toss the sliced cucumbers with salt and let them sit for about 10 minutes.
- In a separate bowl, whisk together sugar, rice vinegar, sesame oil, soy sauce, and red pepper flakes if using.
- Once cucumbers have released moisture, drain and rinse to remove excess salt.
- Combine the cucumbers with the dressing, sesame seeds, and green onions.
- Mix gently until cucumbers are evenly coated and let sit for a few minutes before serving.
- Serve chilled.

Store leftovers in an airtight container in the fridge for up to 2 days. For best texture, mix cucumbers and dressing just before serving.
