Preparation
  1. In a large salad bowl, add the fresh arugula. If you're using cherry tomatoes and walnuts, toss them in lightly.
Dressing
  1. In a separate bowl, whisk together the olive oil and balsamic vinegar until well combined.
Seasoning
  1. Drizzle the dressing over the arugula and other ingredients in the salad bowl. Season with salt and pepper to taste.
Add Cheese and Serve
  1. Gently toss the salad to ensure all the leaves are coated in the dressing. Then, add the shaved Parmesan cheese on top.
  2. Immediately plate your salad. This dish is best enjoyed fresh.

Notes

Dress the salad just before serving to keep the arugula nice and crunchy. Avoid overdressing; start with a little and add more if necessary. Store without dressing to keep fresh for up to 2 days.
