Preparation
- In a large salad bowl, add the fresh arugula. If you're using cherry tomatoes and walnuts, toss them in lightly.
Dressing
- In a separate bowl, whisk together the olive oil and balsamic vinegar until well combined.
Seasoning
- Drizzle the dressing over the arugula and other ingredients in the salad bowl. Season with salt and pepper to taste.
Add Cheese and Serve
- Gently toss the salad to ensure all the leaves are coated in the dressing. Then, add the shaved Parmesan cheese on top.
- Immediately plate your salad. This dish is best enjoyed fresh.
Notes
Dress the salad just before serving to keep the arugula nice and crunchy. Avoid overdressing; start with a little and add more if necessary. Store without dressing to keep fresh for up to 2 days.
