Preparation
- Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides of each breast generously with salt and pepper.
- In a medium bowl, combine the chopped parsley, minced garlic, oregano, red pepper flakes, olive oil, and red wine vinegar. Mix well until all ingredients are incorporated.
- Take half of the chimichurri sauce and use it to marinate the chicken. Coat each piece thoroughly and allow to marinate for at least 15-20 minutes at room temperature.
Cooking
- Heat a grill or skillet over medium-high heat. Place the chicken on the grill or skillet and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Remove the chicken from heat and let it rest for a few minutes before slicing.
Serving
- Serve the chicken pieces drizzled with the remaining chimichurri sauce and enjoy!
Notes
For substitutions, cilantro can be used instead of parsley, though it changes the flavor. For best results, marinate the chicken longer for enhanced flavor. Avoid overcooking to ensure juiciness.
