Ingredients

  • 2 cups all-purpose flour You can substitute with spelt flour.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Ensure it's Halal-compliant.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened applesauce
  • 1 cup diced apples (peeled and cored)
Brown Sugar Icing
  • 1/4 cup brown sugar Equal parts with butter and milk for icing.
  • 1/4 cup butter
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan with butter or non-stick spray.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  6. Gradually mix in the unsweetened applesauce and then add the flour mixture in batches, stirring until just combined.
  7. Gently fold in the diced apples.
Baking and Icing
  1. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  3. For the icing, whisk together the brown sugar, butter, and milk, heating gently until combined. Pour over the cooled cake.
  4. Slice and enjoy!

Notes

Store tightly covered in the refrigerator for up to 4-5 days, or freeze for up to 3 months. Reheat slices in the microwave for 15-20 seconds before serving.
