Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups peeled and chopped apples
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking pan.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until combined. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until just combined.
  6. Gently fold in the chopped apples.
Baking
  1. Pour the batter into the prepared pan and spread it evenly.
  2. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For a healthier version, substitute half of the all-purpose flour for whole wheat flour. Store in an airtight container for up to 3 days or freeze for up to 3 months.
