Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x13 inch baking pan.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until combined. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually combine the dry ingredients with the wet mixture, stirring until just combined.
- Gently fold in the chopped apples.
Baking
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Cooling
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For a healthier version, substitute half of the all-purpose flour for whole wheat flour. Store in an airtight container for up to 3 days or freeze for up to 3 months.
