Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet mixture, mixing until just combined. Avoid overmixing.
- Gently fold in the chopped apples and walnuts (if desired) until they are evenly distributed.
- In a small bowl, combine the 1/4 cup sugar and 1 tsp cinnamon for rolling.
- Scoop out tablespoon-sized portions of the dough, roll them into balls, and then coat them in the cinnamon-sugar mixture.
- Place the dough balls evenly spaced on a lined baking sheet.
Baking
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, sift your flour and consider chilling the dough for easier handling. Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
