Preparation
- Preheat the oven to 400°F (205°C).
- In a medium bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Stir until the apples are evenly coated and let sit for about 10 minutes.
- Roll out the refrigerated pie crusts on a lightly floured surface into a larger sheet, about 1/8 inch thick, and cut into rectangles (about 3 x 4 inches).
Assembly
- Place a tablespoon of the apple filling in the center of each rectangle.
- Whisk the egg and brush around the edges of each rectangle. Place another rectangle on top and press down gently to seal, using a fork to crimp the edges.
Baking
- Arrange the pop tarts on a baking sheet lined with parchment paper, brush the tops with egg wash, and bake for about 20-25 minutes, or until golden brown.
Glazing
- While the pop tarts are cooling, whisk together the powdered sugar and milk until smooth; drizzle over the cooled pop tarts.
Notes
Store in an airtight container in the refrigerator for 3-4 days or freeze for up to three months. Reheat in the microwave or toaster oven.
