Ingredients
  

For the Filling
  • 2 cups diced apples Use a mix of sweet and tart varieties.
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
For the Pastry
  • 1 package refrigerated pie crusts Alternatively, make your own shortcrust pastry.
  • 1 egg for egg wash
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat the oven to 400°F (205°C).
  2. In a medium bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Stir until the apples are evenly coated and let sit for about 10 minutes.
  3. Roll out the refrigerated pie crusts on a lightly floured surface into a larger sheet, about 1/8 inch thick, and cut into rectangles (about 3 x 4 inches).
Assembly
  1. Place a tablespoon of the apple filling in the center of each rectangle.
  2. Whisk the egg and brush around the edges of each rectangle. Place another rectangle on top and press down gently to seal, using a fork to crimp the edges.
Baking
  1. Arrange the pop tarts on a baking sheet lined with parchment paper, brush the tops with egg wash, and bake for about 20-25 minutes, or until golden brown.
Glazing
  1. While the pop tarts are cooling, whisk together the powdered sugar and milk until smooth; drizzle over the cooled pop tarts.

Notes

Store in an airtight container in the refrigerator for 3-4 days or freeze for up to three months. Reheat in the microwave or toaster oven.
