Preparation
- In a large bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Toss together until the apples are well-coated. Let sit for about 5 minutes to allow the flavors to blend.
Assembly
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2-3 tablespoons of the apple mixture into the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the side corners, and roll tightly upwards. Seal the top corner with a little water. Repeat until all the wrappers are filled.
Cooking
- Heat oil in a deep skillet over medium-high heat. Once hot, carefully place a few egg rolls at a time into the oil, frying until golden brown on all sides, approximately 2-3 minutes. Remove and let drain on paper towels.
Serving
- Drizzle the fried egg rolls with melted butter, sprinkle some sugar on top, and serve warm.
Notes
For added flavor, consider adding caramel or nuts to the apple filling. Ensure wrappers are sealed tightly to prevent leaking during frying. Refrigerate leftover rolls for up to 3 days or freeze for up to 3 months.
