Ingredients
  

For the Cupcakes
  • 1 cup all-purpose flour Ensure it is halal compliant.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted Ensure it is halal compliant.
  • 1 large egg
  • 1/2 cup applesauce
  • 1/2 cup diced apples
  • 1/2 teaspoon vanilla extract
For the Frosting
  • 1 cup powdered sugar
  • 2 tablespoons butter, softened Ensure it is halal compliant.
  • 1/2 teaspoon cinnamon
  • 1-2 tablespoons milk Add more as needed for consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the melted butter, egg, applesauce, diced apples, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to over-mix!
  5. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
Baking
  1. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Frosting Preparation
  1. While the cupcakes cool, mix together the powdered sugar, softened butter, cinnamon, and milk until smooth and fluffy. Adjust consistency with more milk if needed.
Frosting the Cupcakes
  1. Once the cupcakes are completely cool, pipe or spread the cinnamon frosting on each cupcake.

Notes

Substitutions: Consider using a gluten-free flour blend or natural sweeteners for a healthier version. Store in an airtight container at room temperature for up to 3 days or refrigerate for a week. They can also be frozen for up to 3 months.
