  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Wet Ingredients
  • 1/4 cup unsalted butter, softened Can substitute with coconut oil for dairy-free option.
  • 1/2 cup milk Can substitute with almond milk or oat milk for dairy-free option.
  • 1 egg
  • 1 teaspoon vanilla extract
Filling
  • 1 cup diced apples Fresh apples work best.
Optional Decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg. Whisk together.
  3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Stir in the egg, milk, and vanilla extract into the butter-sugar mixture until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
  6. Fold in the diced apples until just incorporated.
  7. Scoop the batter into the lined cupcake tin, filling each liner about 2/3 full.
Baking
  1. Bake in the preheated oven for about 20-25 minutes. They’re done when a toothpick inserted comes out clean.
  2. Allow the cupcakes to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Serving
  1. If desired, drizzle with icing or enjoy them plain for a rustic charm.

Notes

To keep the cupcakes fresh, store in an airtight container at room temperature for 2-3 days. For longer storage, freeze them for up to 3 months. Reheat in the microwave for 10-15 seconds, being careful not to dry them out.
