Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a medium bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg. Whisk together.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
- Stir in the egg, milk, and vanilla extract into the butter-sugar mixture until well combined.
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
- Fold in the diced apples until just incorporated.
- Scoop the batter into the lined cupcake tin, filling each liner about 2/3 full.
Baking
- Bake in the preheated oven for about 20-25 minutes. They’re done when a toothpick inserted comes out clean.
- Allow the cupcakes to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Serving
- If desired, drizzle with icing or enjoy them plain for a rustic charm.
Notes
To keep the cupcakes fresh, store in an airtight container at room temperature for 2-3 days. For longer storage, freeze them for up to 3 months. Reheat in the microwave for 10-15 seconds, being careful not to dry them out.
