Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the diced apples.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- Scoop tablespoonfuls of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Make a small indentation in the center of each cookie and add a dollop of the cheesecake mixture.
Baking
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to one week. Freeze them for up to three months. Reheat in the oven at 350°F for 5-7 minutes for a warm treat.
