Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
- Gently fold in the chopped apples.
- In another bowl, mix softened cream cheese and powdered sugar until smooth.
Baking
- Scoop out a portion of cookie dough, flatten it, place a dollop of cheesecake filling in the center, then cover with another scoop of dough. Roll into a ball.
- Place on a parchment-lined baking sheet and bake for 12-15 minutes, until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for a few seconds or in a preheated oven at 350°F for about 5-7 minutes.
