  • 1 cup brown sugar

  • 1 teaspoon baking soda

Cheesecake Filling
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
  5. Gently fold in the chopped apples.
  6. In another bowl, mix softened cream cheese and powdered sugar until smooth.
Baking
  1. Scoop out a portion of cookie dough, flatten it, place a dollop of cheesecake filling in the center, then cover with another scoop of dough. Roll into a ball.
  2. Place on a parchment-lined baking sheet and bake for 12-15 minutes, until the edges are golden brown.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for a few seconds or in a preheated oven at 350°F for about 5-7 minutes.
