Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Fold in the chopped apples.
Crumb Topping
- In another bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Baking
- Spoon the apple muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
- Sprinkle the crumb topping generously over the batter.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to wire racks to cool completely.
Notes
For storage, place leftover muffins in an airtight container at room temperature for up to 3 days, refrigerate for about a week, or freeze for up to 2 months. To reheat, microwave for 15-20 seconds or bake at 350°F (175°C) for 5-7 minutes.
