Ingredients
  

For the Bread
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups diced apples (about 2 medium apples) Tart varieties such as Granny Smith or Honeycrisp recommended.
For the Glaze
  • 3/4 cup powdered sugar
  • 2 tablespoons milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well blended.
  3. In another bowl, combine the eggs, milk, oil, and vanilla. Whisk until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix!
  5. Fold in the diced apples gently until they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
Glazing
  1. While the loaf cools, mix powdered sugar and milk in a small bowl until smooth to create the glaze.
  2. Drizzle the glaze over the cooled loaf, slice, and serve!

Notes

Store leftover Apple Fritter Bread in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. For longer storage, wrap individual slices in plastic wrap and freeze for up to three months. Reheat slices in the microwave for 15-20 seconds or toast for a freshly-baked taste.
