Ingredients
  

Muffin Batter
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup peeled and diced apples
Crumble Topping
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir until well mixed.
  3. In another bowl, whisk together the melted butter, milk, egg, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Gently fold in the diced apples.
  6. In a separate bowl, mix together the brown sugar, rolled oats, and cinnamon. Drizzle in melted butter if desired.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle the crumble topping over each muffin.
Baking
  1. Bake for 20–25 minutes or until the tops are golden brown and a toothpick comes out clean.
  2. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For healthier options, use whole wheat flour or substitute applesauce for butter. Avoid overmixing to keep muffins light.
