Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir until well mixed.
- In another bowl, whisk together the melted butter, milk, egg, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Gently fold in the diced apples.
- In a separate bowl, mix together the brown sugar, rolled oats, and cinnamon. Drizzle in melted butter if desired.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle the crumble topping over each muffin.
Baking
- Bake for 20–25 minutes or until the tops are golden brown and a toothpick comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For healthier options, use whole wheat flour or substitute applesauce for butter. Avoid overmixing to keep muffins light.
