Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups peeled and diced apples
Crumble Topping
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 1/4 cup butter, cold and cubed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, milk, and eggs until well combined.
  4. Pour the wet ingredients into the dry mixture and gently fold until just combined, ensuring not to overmix.
  5. Fold in the diced apples until evenly distributed.
  6. In a separate bowl, combine the brown sugar, rolled oats, flour, cinnamon, and cold cubed butter. Mix until it resembles coarse crumbs.
  7. Spoon the muffin batter into the prepared tin, filling each cup about 2/3 full, and sprinkle the crumble mixture evenly on top of each muffin.
Baking
  1. Place in the preheated oven and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a healthier twist, you can use whole wheat flour or coconut oil instead of butter. Avoid overmixing to keep muffins fluffy. Store in an airtight container for up to three days or freeze for longer storage.
