Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
For the Cheesecake Filling
  • 2 cups cream cheese, softened Use high-quality for best flavor.
  • 1 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
For the Apples
  • 2 cups sliced apples (your choice) Fresh apples preferred.
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar To enhance apple flavor.
For the Crumble Topping
  • 0.5 cups brown sugar
  • 0.5 cups old-fashioned oats
  • 0.25 cups all-purpose flour
  • 1 teaspoon cinnamon Optional for extra flavor.
  • 0.5 cups unsalted butter, melted

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs with melted butter. Mix until the crumbs are fully coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for about 10 minutes or until lightly golden. Remove and set aside.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese until smooth.
  2. Gradually add the sugar, mixing until well blended.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla until fully combined.
  4. Pour the cheesecake mixture over the baked crust, smoothing it out evenly.
Prepare the Apples
  1. Toss the sliced apples in a bowl with cinnamon and a tablespoon of sugar.
  2. Layer the spiced apple slices over the cheesecake filling.
Make the Crumble Topping
  1. In a separate bowl, combine the brown sugar, oats, flour, and a bit of cinnamon. Mix well, then add in melted butter until the mixture resembles coarse crumbs.
  2. Sprinkle the crumble mixture generously over the apple slices.
Bake the Cheesecake
  1. Place the entire springform pan into the preheated oven. Bake for 45 to 50 minutes or until the cheesecake is set and the crumble is golden brown.
  2. Once done, allow it to cool for about an hour at room temperature. Refrigerate for at least 4 hours (or overnight) for the best texture.

Notes

To store, cover tightly and refrigerate. Lasts about 5-7 days. For freezing, wrap well in plastic and foil for up to 3 months.
