Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Wet Ingredients
  • ½ cup unsalted butter, softened Make sure it's at room temperature
  • 1 cup brown sugar Can be packed for extra sweetness
  • 1 large egg Room temperature for better mixing
  • 1 tsp vanilla extract Enhances flavor
Add-ins
  • 1 cup grated apples (about 2 medium apples) Peel and grate apples before measuring
  • ½ cup oats Adds texture
  • ½ cup chopped nuts (optional) Choose your favorite nuts

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat the softened butter and brown sugar together until smooth and creamy.
  4. Beat in the egg and vanilla extract until combined and fluffy.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the grated apples and oats, and add chopped nuts if using.
  7. Using a cookie scoop or tablespoon, drop spoonfuls onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until the edges are golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, substitute coconut oil for butter. Keep an eye on baking time, as it may vary. To avoid dry cookies, do not overmix once adding flour. Store in an airtight container for up to a week, or freeze for up to 3 months.
