Ingredients
  

Shortbread Base
  • 1 cup unsalted butter, softened Can substitute with neutral oil, though butter is preferred.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 cups all-purpose flour Can be substituted with a gluten-free blend.
  • 1/2 teaspoon salt
Apple Filling
  • 2 cups diced apples (about 2-3 apples)
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
Oat Topping
  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts (optional) Use any preferred nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Gradually add in the flour and salt until well combined.
  4. Line a 9x13-inch baking dish with parchment paper. Press 2/3 of the dough evenly into the bottom to form the base.
Apple Filling
  1. In a separate bowl, toss the diced apples with cinnamon and lemon juice. Spread this mixture evenly over the shortbread base.
Topping and Baking
  1. Crumble the remaining dough over the spiced apples. Sprinkle the rolled oats and nuts on top.
  2. Place the dish in the oven and bake for approximately 30 minutes, or until the top is golden brown and the apples are tender.
Serving
  1. Allow the bars to cool in the pan for at least 10 minutes before slicing into squares.
  2. Best enjoyed warm, but can be stored for later.

Notes

For storage, keep in an airtight container in the refrigerator for up to a week or freeze for up to three months. Reheat in the oven for 10-12 minutes at 350°F (175°C).
