Preparation
- In a bowl, combine sliced apples with granulated sugar, cinnamon, and lemon juice. Allow it to sit for about 10 minutes.
- In another mixing bowl, beat the cream cheese until smooth. Gradually add sour cream and mix until well combined. Fold in powdered sugar and vanilla extract.
- In a separate bowl, combine graham cracker crumbs, melted butter, oats, and half of the brown sugar. Mix until it resembles damp sand.
Layering and Baking
- Preheat your oven to 325°F (163°C). In a greased springform pan, press half of the crumb mixture onto the bottom.
- Spread the cheesecake mixture on top of the crust layer. Layer the seasoned apple slices over the cheesecake.
- Sprinkle the remaining crumb mixture over the apples and drizzle a bit of melted butter on top.
- Bake for about 60 minutes until the edges are slightly browned and the center is set but jiggly. Let it cool completely before slicing.
Notes
For a lighter cheesecake, consider using Greek yogurt or low-fat cream cheese. Let the cheesecake cool at room temperature for about an hour before refrigerating to avoid cracks. Do not overmix the cream cheese mixture.
