Ingredients
  

For the Apples
  • 2 cups sliced apples
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons lemon juice
For the Cheesecake
  • 1 ½ cups cream cheese Make sure it's softened.
  • 1 cup sour cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Crust and Topping
  • 1 cup graham cracker crumbs
  • ½ cup butter, melted
  • ½ cup oats
  • ½ cup brown sugar

Method
 

Preparation
  1. In a bowl, combine sliced apples with granulated sugar, cinnamon, and lemon juice. Allow it to sit for about 10 minutes.
  2. In another mixing bowl, beat the cream cheese until smooth. Gradually add sour cream and mix until well combined. Fold in powdered sugar and vanilla extract.
  3. In a separate bowl, combine graham cracker crumbs, melted butter, oats, and half of the brown sugar. Mix until it resembles damp sand.
Layering and Baking
  1. Preheat your oven to 325°F (163°C). In a greased springform pan, press half of the crumb mixture onto the bottom.
  2. Spread the cheesecake mixture on top of the crust layer. Layer the seasoned apple slices over the cheesecake.
  3. Sprinkle the remaining crumb mixture over the apples and drizzle a bit of melted butter on top.
  4. Bake for about 60 minutes until the edges are slightly browned and the center is set but jiggly. Let it cool completely before slicing.

Notes

For a lighter cheesecake, consider using Greek yogurt or low-fat cream cheese. Let the cheesecake cool at room temperature for about an hour before refrigerating to avoid cracks. Do not overmix the cream cheese mixture.
