Ingredients
  

Salad Base
  • 2 cups mixed greens Freshly washed and dried
  • 1 piece apple, diced Choose your favorite variety, tart like Granny Smith for zing
  • 1 cup cranberries Dried or fresh
  • 1/2 cup pecans, chopped Roasted for added flavor
  • 1/4 cup feta cheese Optional, add for extra flavor
  • 1/4 cup red onion, thinly sliced
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. Wash and dry the mixed greens thoroughly using a salad spinner.
  2. Core and dice your chosen apple.
Assembly
  1. In a large mixing bowl, combine the mixed greens, diced apple, cranberries, chopped pecans, and red onion slices.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, and a pinch of salt and pepper.
  3. Drizzle the dressing over your salad and gently toss to combine all the flavors. If using, add the feta cheese and mix lightly.
  4. Serve immediately for the best flavors, or allow it to chill in the refrigerator for 10 minutes for a refreshing taste.

Notes

For optimal freshness, store leftover salad in an airtight container in the refrigerator for about 2-3 days. Mix salad just before serving for the freshest taste. Avoid overwhelming with dressing.
