  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
Add-ins
  • 1 cup peeled and diced apples Use a combination of sweet and tart apples for balance.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease them.
  2. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, ground cinnamon, granulated sugar, and brown sugar. Whisk until well blended.
  3. In another bowl, whisk together the wet ingredients: melted unsalted butter, eggs, vanilla extract, and milk until thoroughly combined.
Mixing
  1. Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine!
  2. Gently fold in the diced apples until evenly distributed.
Baking
  1. Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
  2. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  3. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Enjoy warm or at room temperature!

Notes

Top with powdered sugar or a drizzle of honey for an added treat. Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds when ready to enjoy.
