Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease them.
- In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, ground cinnamon, granulated sugar, and brown sugar. Whisk until well blended.
- In another bowl, whisk together the wet ingredients: melted unsalted butter, eggs, vanilla extract, and milk until thoroughly combined.
Mixing
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine!
- Gently fold in the diced apples until evenly distributed.
Baking
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
Notes
Top with powdered sugar or a drizzle of honey for an added treat. Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds when ready to enjoy.
