Ingredients
  

For the cookies
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
For the filling
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup apple cider

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, followed by the apple cider and vanilla extract, until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Use a cookie scoop or tablespoon to drop dollops of batter onto your prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-15 minutes, until the cookies spring back when gently pressed.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Filling
  1. In a medium bowl, mix the softened cream cheese, powdered sugar, and apple cider until smooth and creamy.
  2. Once the cookies are cool, spread a generous amount of filling on the flat side of one cookie and sandwich it with another cookie.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for about 3 months. For best texture, allow cookies to cool completely before adding filling.
