Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, baking powder, and salt. Set this mixture aside.
- In another bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes using an electric mixer on medium speed).
- Mix in the egg, apple cider, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Use a cookie scoop or tablespoon to drop the batter onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake in your preheated oven for 10-12 minutes or until they spring back when lightly pressed.
- Allow the whoopie pie rounds to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Assembly
- Once cooled, take one round and spread cream cheese frosting on the flat side, topping it with another round to make a sandwich. Repeat with the remaining rounds.
Serving
- Serve fresh. They stand deliciously well on their own!
Notes
Store in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to three months. Reheat in the microwave for a warm treat.
