For the Cookies
  • 1 cup apple cider Reduce to concentrate the flavor
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened Make sure it's not melted
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the Filling
  • Caramel sauce for filling Store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, bring the apple cider to a gentle boil, then reduce to a simmer until it reduces to about 1/2 cup (10-15 minutes). Allow it to cool slightly.
  3. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 3-5 minutes).
  5. Mix in the egg and reduced apple cider until fully combined.
  6. Gradually add the dry ingredients to the wet mixture and mix until just incorporated.
  7. Drop rounded mounds of dough onto the prepared baking sheet, spacing them apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until just set and lightly browned.
  2. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Assembly
  1. Once the cookies are cool, spread caramel sauce on the flat side of one cookie and top with another cookie.
  2. Repeat until all cookies are filled.

Notes

For best results, ensure butter is softened but not melted. Consider chilling the dough for 30 minutes to prevent spreading in warmer climates. Store in an airtight container at room temperature for up to 3 days.
