Preparation
- Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan or standard loaf pan.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 5 minutes.
- Crack in your eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Slowly stir in the apple cider and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
Baking
- Pour the batter into the prepared pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
Notes
Store leftovers tightly wrapped in plastic wrap or aluminum foil in the refrigerator for up to a week. Can freeze slices separately for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at a low temperature.
