  • 4 large eggs

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan or standard loaf pan.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 5 minutes.
  3. Crack in your eggs, one at a time, ensuring each is fully incorporated before adding the next.
  4. Slowly stir in the apple cider and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
Baking
  1. Pour the batter into the prepared pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

Store leftovers tightly wrapped in plastic wrap or aluminum foil in the refrigerator for up to a week. Can freeze slices separately for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at a low temperature.
